You want to make sure your consultant will cover all of your bases and then some. And, this is not a one-time deal. These sorts of policies should be updated and revised on a regular basis.
One final point to remember is that you, as owner of the company, need to be able to have a strong and open working relationship with the consultant. If the person you bring in to help guide your company does not even understand your basic vision for it, it is unlikely that you will arrive at your final desired destination.
