To do this, you must identify your Prime Menu Items. Prime menu items can be identified using the following factors:
1. Profit Margin - It is the sales price less the cost of an item’s raw ingredients plus overhead. Within each section of your menu, some menu items may have considerably greater profit margins than others. Given the choice, you’d probably rather sell more of your high gross profit items.
2. Labour Cost - Labor involved in initial preparation of ingredients and recipes. Some menu items may require much more preparation labour than others. Although difficult to quantify in value, highly labour intensive items cost you more to serve.
3. Final Preparation - Labour and time required for final preparation and delivery. When your place is full, time can become THE critical factor. You probably want guests ordering more menu items the kitchen can prepare and deliver quickly.
4. X Factor - Menu items that guests rave about and come back for. Consider menu items that are unique, award-winning and stand out for their taste and visual appeal.
Train your servers to recommend such items to your guests. Use your menu to highlight these items using graphics and highlighters.

I have a client who started collected stuff 15 years ago to one day start selling it..through flea markets etc. He is now starting to feel like one of Oprah's hording guests! And are you trying to encourage him to sell it now because those goods are currently high in demand?
New Apprentice - will it be a bust? New Apprentice - will it be a bust? - Being a fan of the Apprentice I admit that the quality has decreased since the first season but I was sad to see that they canceled the show. I was excited to hear that the show would be making a comeback but it seems to be less and less focused on business tasks and more about bringing in celebrity guests. In the newspaper yesterday I read about them courting Britney Spears, Paris Hilton, and Lindsey Lohan to the show. Whether it is true or not I would prefer that the show focuses back in on quality business tasks. I would much rather see a new season that was similar to season 1 than one filled with celebrities who have questionable business experience. What do you think?
Franchise Choice Franchise Choice - I would go with the fruit flower arrangements (flower baskets & centerpieces made out of real fruit). Those franchises have a high success rate and have a fast ROI. When you think about it, with a great location and heavy advertising in place you can really do well with that one. Land a few wedding planners and catering halls as clients and you can really do well. Not to mention that people are always going to be giving gifts and throwing party's and think of the holidays! I can see that being really well for valentines day, mothers day and Easter among all the other holidays. I went to a wedding and they had them on the table rather than real flowers. Everyone was boasting about what a great idea that was and guests really enjoyed eating them! It sure seems like it could be the new craze with weddings.
Re: Back in action... Re: Back in action... - Hi David, Welcome back and I hope all is well with the family back in the UK. Sound like you had a nice evening on your return now that you are back in the saddle. Do I assume that you speak Japanese or do all the guests try to speak in English? The reason I ask is that I have spent a lot of time in Europe in my life and to my shame I have never tried (well not seriously) to speak a second language. Apart from French at school (which I have since lost) I have become like a lot of English speaking people and become lazy. I fully intend if at all possible to spend at least part of the year in Spain when I retire as I have always been happy there. For that reason I have just started Spanish language lessons in the hope that when I do retire I will have advanced to a level where I am comfortable with it. That’s the plan anyway; I would love to hear from other mods if you have any other languages or interesting experiences when trying to learn a new one, regards, Mal.
